Baked Egg Cups
Baked Egg Cups are a fun twist on portable breakfast! They are quick, simple, and delicious. You can customize them to include whatever ingredients your family enjoys. Today I made a variety of egg cups, with different combinations of toppings. Use whatever you have in the fridge and have fun with them!
What To Do:
-These are really simple. Preheat the oven to 400F. In short, you want to pre-cook your bacon slightly, until it nicely browned but still flexible. Drain them on a paper bag.
-While they are still warm, place one slice of bacon in each muffin tin. This morning I used a 12-cup muffin tin.
- I like to place diced Canadian bacon or Uncured Honey Baked Ham in the bottom of the cups so that the salt will naturally flavor the eggs.
-Crack an egg into each bacon-wrapped muffin cup, and top them with your desired ingredients!
-This morning, I used a mix of avocado, tomato, Canadian bacon, green onions, onions, spinach, mushrooms, and cheeeese. Season each egg cup with salt and pepper.
-Bake your egg cups at 400F for 9-11 minutes, depending on how runny you like your yolks :)
