Prosciutto Nectarine Ricotta Bites

Toasty French baguette slices topped with fluffy ricotta, sweet grilled nectarines (or peaches), salty prosciutto, and herbaceous basil. The fresh intensity of a few flakes of Maldon salt and a drizzle of reduced balsamic vinegar on top set off this appetizer. This crostini is a combination of classic flavors in one bite. And an added benefit: you can get everything you need at TJ’s! There are no rules to this one - make as many as you want, and as messy as you want :)

What You Need:

  • one French baguette

  • ricotta cheese

  • nectarines or peaches

  • balsamic vinegar

  • fresh basil

  • extra virgin olive oil (evoo)

  • prosciutto

  • Maldon salt flakes

  • grill pan

What To Do:

  1. Wash, core, and slice the nectarines. Grill the slices over medium heat.

  2. Slice the baguette on the bias into 1” thick pieces. Brush the surface of the bread with a bit of olive oil. Toast them in the oven or on a grill pan until lightly golden.

  3. In a sauce pan over extremely low heat, reduce some balsamic vinegar for a few minutes until it is thick and clings to a spoon.

  4. To build a bite, top a toasted slice of baguette with a smear of ricotta. Sprinkle a few flakes of Maldon onto the ricotta. Top the ricotta with a grilled nectarine and a piece of prosciutto. Add a sprig of fresh basil and a drizzle of balsamic glaze. Enjoy!
