Prosciutto Nectarine Ricotta Bites

Toasty French baguette slices topped with fluffy ricotta, sweet grilled nectarines (or peaches), salty prosciutto, and herbaceous basil. The fresh intensity of a few flakes of Maldon salt and a drizzle of reduced balsamic vinegar on top set off this appetizer. This crostini is a combination of classic flavors in one bite. And an added benefit: you can get everything you need at TJ’s! There are no rules to this one - make as many as you want, and as messy as you want :)

Two years later, I’m happy to be creating and posting new recipes on Broke and Cooking. Instead of playing catch up, let’s get right to the recipe that came to my mind simply because of the gorgeous nectarines and peaches at Trader Joe’s this season.

This recipe came about as a happy accident. One night (I know you love breakfast for dinner!) I was craving pancakes and decided to whip up a quick batch (carbs be damned). I only had skim milk (0% fat milk) that I use with cereal, and didn't think it would really make a difference. You know the saying "The first pancake is always a failure"? I totally thought that was the case when I poured this batter on the hot skillet. The resulting pancake was more like a crepe - thin, fluffy, and beautifully crisp along the edges. I realized I had just created a hack for crepes - until I googled it and discovered it was a thing. Either way, here's a super simple recipe for crepes that can be turned sweet or savory...whatever you like :) 

Today I'm filling them with plain yogurt and fresh strawberries, topping them with toasted coconut, lemon zest for brightness, and a scoop of non-dairy ice cream. I'm using Happy Cow Dairy-Free Ice Cream, which is made from coconut milk and brings tons of creamy decadence to this dish! Let's get cookin!

Ok, I think we can all agree that everything...everything is better with bacon. Crisp, salty, fatty delicious bacon. BBQ season is here and grilling fruit is definitely one of my favorite ways to celebrate summer. The caramelization of the fruit is really delicious with the flavor of the bacon, and adding a simple reduced balsamic vinegar makes this the easiest appetizer ever. PMP Summer Salad (Grilled Peach, Melon & Prosciutto)

Prosciutto & melon is one of the most glorious classic flavor combinations ever. The perfect blend of sweet and salty, refreshing and savory…not to mention so easy to throw together. These little BFF’s are usually served as a delicate piece of prosciutto wrapped around a ripe piece of cantaloupe. This beautiful salad steps it up a bit without being super pretentious. Peppery arugula serves as the base, but you can totally use whatever greens you’ve got in the fridge. Grilling fruit is such a great way to elevate any dish. It brings out the natural sugars in the fruit and makes everything taste even more vibrant. A mix of sweet melon balls, creamy mozzarella, grilled peaches, thin, salty prosciutto, a bite from slivers of raw red onion, sea salt & a crack of black pepper make the most delicious summer salad.
