Mother's Day is just around the corner! For some reason, this holiday always makes me think of French Toast. Maybe it's because Mother's Day feels like one of those mornings you wake up to sneak to the kitchen and surprise Mom with breakfast in bed. Or going out to brunch with family - either way, French Toast is pretty to look at, simple to make, and delicious to eat. One of the most popular items on a brunch menu is often a Lemon Ricotta Stuffed French Toast. The idea of making this at home was intriguing to me - how hard could it be? Turns out, it's super simple and only takes 20 minutes. What I love about this recipe is that you can substitute ricotta for mascarpone or cream cheese like I did :) Adding fresh lemon zest and juice to the filling gives the perfect punch to this sweet breakfast. Top it off with your Mom's favorite fresh fruit and you'll be chalkin up all kinda Brownie points :) Let's get cookin!

I really wanted to come up with a fun appetizer that involved deliciously tangy cranberries. This dip is unexpectedly tasty. A blend of fresh cranberries, lemon juice, sugar, jalapeño, green onions, cumin, and cilantro is served over softened cream cheese...yes a block of cream cheese! Honestly, what's better than a good dip? All you've gotta do is throw all the ingredients together, let it macerate a bit in the fridge, and pulse it in a blender. The result is a vibrant cranberry relish that is perfectly sweet, tangy, earthy, and with a slight spicy kick. This dip is festive, flavorful, easy on the wallet, and perfect for potlucks. Surprise Mom with these delicious pastries that are completely customizable and easy for little ones to make! No need to mess around with puff pastry - crescent roll dough make these treats super accessible. I thought that the slight tang of raspberry jam would pair nicely with sweetened cream cheese, but you can use anything you wish! Apple pie filling, ripe peaches, strawberry preserves, chocolate, or even go the savory route and pair regular cream cheese with salsa and jalapeños.
