Minty Spring Pea & Ricotta Ravioli

Minty Spring Pea & Ricotta Ravioli

Alright are you ready to impress everyone in your family, including yourself? Time to make some homemade ravioli! Don’t worry, we aren’t making fresh pasta dough - this is an easy and accessible recipe that will become one of your favorite staples! In keeping with this beautiful warm weather, I’ve kept the filling nice and light for this dish. After devouring all the ravs, I’m definitely going to adapt this recipe and make a heartier fall ravioli in the near future!

These babies are so simple to throw together. It’s as easy as blending the filling ingredients together, and sandwiching a healthy dollop in between two paper thin wonton wraps. Seal them up and toss them in boiling water for about 3 minutes, and serve it any way you like! Today I’ll show you how to make a brown butter sauce with accents of what else, but bacon :) You can also serve these homemade ravioli in broth for a heartwarming meal. Let’s get cookin! :)

Ahi Poke & Wonton Crisps

Ahi Poke & Wonton Crisps

Poke is something you crave. Something you daydream about. Tender chunks of raw ahi tuna, marinated in shoyu, sesame oil, and any combination of chili pepper and sriracha. Other variations of ingredients may include seaweed, green onion, maui or red onion, toasted sesame seeds, furikake, garlic, or tobiko. If you’ve been lucky enough to travel to Hawaii, most likely you’ve tried authentic poke and you’ll know why it’s something I crave constantly.

Classic Pesto Pasta Salad with Grilled Chicken

Classic Pesto Pasta Salad with Grilled Chicken

I love experimenting with fun, seasonal ingredients, but sometimes learning to make a classic is just as great. Pesto can be made with tons of different ingredients; it’s a game of mix and match. A great pesto only requires a few fresh ingredients. The most important part is using fresh basil (or your favorite herbs) and good quality extra virgin olive oil.

This recipe is simple and delicious. Pesto is incredibly versatile - once you have a fresh batch, you can use it on way more than pasta! Make homemade pizza, eat it with eggs, spread it on bread or a sandwich, or use it as a salad dressing. This recipe is for a classic basil pesto. A quick pulse in a food processor and you have a fresh, garlicky sauce that is way better than a jar from the store. Let’s get cookin :)

Dover Sole A La Meuniere

Dover Sole A La Meuniere

During the week, I like to eat lighter meals. It’s great to have an arsenal of simple, reliable recipes that you can tweak and put your twist on. This classic recipe uses Dover sole, a flatfish that is prized for its mild, buttery, sweet flavor and versatility. The classic recipe coats the fish in seasoned flour, but I’ve added another step to give it a little more crispiness. Butter and lemon enhance the natural taste and texture of the fish. Sole is affordable and pretty hard to mess up. You can use the techniques in this recipe on other protein as well! Let’s get cookin :)

Vietnamese Pork Chops with Cantaloupe Basil Salad

Vietnamese Pork Chops with Cantaloupe Basil Salad

Vietnamese food is definitely something I crave often. Tons of fresh herbs, pickled veggies, and multiple layers of flavor are some of my favorite things about Vietnamese food. I would love to learn authentic recipes from someone one day! Today I’m sharing a fun and simple recipe that’s made with ingredients you might already have in your kitchen. If you don’t happen to eat pork, try this delicious marinade on chicken! This marinade works best overnight, so a quick tip is to throw it together while you’re cooking dinner the previous night and throw it in the fridge. This grilled pork turns out so tender and savory, which is accompanied by a sweet cantaloupe salad. Let’s get cookin!

Homemade Fruit Roll-Ups

Homemade Fruit Roll-Ups

This month’s #MISSDISH is a fun one. Growing up, fruit roll-ups and fruit snacks were some of my favorite snacks at lunchtime. One pack was never enough, and I always saved the strawberry ones for last. Over the years I’ve learned about what types of ingredients make these type of snacks so yummy. Tons of sugar, corn syrup, and other GMOs. One roll of Fruit by the Foot contains 2 tsp of sugar. Often fruit roll-ups don’t even contain real fruit. I decided to experiment with different ways to make snacks that were just as delicious but much more health conscious.
Making homemade fruit roll-ups is way easier than you think. You can use this recipe with any fruit! It’s delicious with strawberries, mango, any blend of berries, even apples and watermelon. With two organic ingredients, you know exactly what’s going into these snacks. These are great for everyone in the family - perfect for kids and great to pack for work. Let’s get cookin!

PMP Summer Salad (Grilled Peach, Melon & Prosciutto)

PMP Summer Salad (Grilled Peach, Melon & Prosciutto)

Prosciutto & melon is one of the most glorious classic flavor combinations ever. The perfect blend of sweet and salty, refreshing and savory…not to mention so easy to throw together. These little BFF’s are usually served as a delicate piece of prosciutto wrapped around a ripe piece of cantaloupe. This beautiful salad steps it up a bit without being super pretentious. Peppery arugula serves as the base, but you can totally use whatever greens you’ve got in the fridge. Grilling fruit is such a great way to elevate any dish. It brings out the natural sugars in the fruit and makes everything taste even more vibrant. A mix of sweet melon balls, creamy mozzarella, grilled peaches, thin, salty prosciutto, a bite from slivers of raw red onion, sea salt & a crack of black pepper make the most delicious summer salad. Let’s get cookin!

Spiked Freckled Lemonade

Spiked Freckled Lemonade

Fourth of July is just around the corner! I’ve never made lemonade before because I was honestly kind of confused - is lemonade just hella lemons and water? How many lemons would you need to fill an entire pitcher? I feel like it would take a ton of lemons to make some good lemonade. But then I experimented in the kitchen and can now share with you that making lemonade is super easy and in fact, is a ton of water! This recipe is really perfect for summer - the base is just a really, really delicious lemonade. But I’ll show you how adding pureed strawberries can make the most refreshing Freckled Lemonade ever. And as usual, you can spike it with booze if you choose :)

Watermelon Feta Salad

Watermelon Feta Salad

I’ve teamed up with the ladies over at MISSBISH for their #MISSDISH series! I’ll be sharing delicious, easy, and healthy recipes on their blog every month :) With that said, it’s officially summer! It’s hella hot outside, and one of my favorite things to make on a hot day is a refreshing Watermelon Feta Salad! Don’t get it twisted, you don’t have to do the crazy grid presentation to enjoy this, but it’s a really fun option for entertaining. This recipe is super easy to throw together and is gorgeous when tossed together in a bowl. There’s something so refreshing about cold, ripe watermelon that’s sprinkled with just a touch of salt, mixed with salty feta, cool cucumber and melon, and creamy avocado. Thin slivers of red onion give the salad a little bite, and fresh mint brings the perfect brightness. A lil drizzle of good balsamic vinegar is all you need to bring it together. Simple, delicious, perfect for summer!

Watermelon Margaritas

Watermelon Margaritas

It’s watermelon season! Watermelon is available year round, but its peak season is May through August. Watermelon is one of my favorite fruits! It has a ton of nutritional benefits, such as a significant source of the antioxidants beta-carotene and vitamin C. It contains lycopene, and is composed of 92% water, making it great for snacking on during warm weather since it helps to keep you hydrated.
Watermelon is soo versatile! You can make smoothies, salsas, sorbets, salads, on its own with lime and salt, or into a refreshing cocktail! This margarita is a crowd pleaser - the perfect mix of sweet and tart - with a good amount of booze that’ll get your party goin.
