Holiday Roasted Pumpkin with Cranberries

Speaking of the holidays, this week's recipe is a simple and cozy side dish that is wonderful for this time of year. Roasting vegetables brings so much depth of flavor to the party, and also gives each piece of pumpkin a nice toasty edge. Adding pumpkin seeds for crunch, and dried cranberries for a tart contrast makes this the easiest dish to bring to your holiday parties this year. 

This recipe is completely adaptable. Don't have pumpkin? Try butternut squash or sweet potato. I like adding cinnamon, pumpkin seeds and dried cranberries, but roasting the veg with trimmed Brussels sprouts, bacon, prosciutto, shallots, pecans, kale, ginger, chili, or cumin is wonderful as well. In this recipe, I finish off the dish with a drizzle of honey or maple syrup, and flaky sea salt, but fresh parsley, feta, or even tossing it with pasta is delicious, too! Breakfast might seriously be my favorite meal of the day. I love eggs, cereal, oatmeal, crepes, omelettes, blintzes..pancakes...waffles.........and I'm salivating. Breakfast has an endless options and one of the great ones is the almighty breakfast sandwich! Sometimes there is nothing better than hearty, toasted bread holding together savory breakfast goodness. This is a super simple breakfast sandwich - use it as a springboard for ideas to make your own, using what you already have! For me, it's all about texture, so I start with a base of creamy avocado, mixed with lime, cilantro, red onion, salt and pepper, and red onion. Add pan-crisped slices of salty prosciutto, and top it off with a nice, runny egg for the perfect breakfast combination. If you've never had crispy prosciutto, go, now! Baking or gently pan-frying tender, delicate pieces of prosciutto transforms the already delicious treat into intensely flavorful, crisp pieces of heaven. You can add pieces to a salad, toss them in pasta, or eat them like chips like I do ;) Let's get cookin!

Growing up, I've gotta admit that I really loved Fig Newtons. But, raise your hand if you've actually never had a fresh fig before! I didn't try the actual fruit until fairly recently. I fell in love with their rich, earthy flavor... sweet, with a slightly chewy texture. They're so simple to eat. Prosciutto & melon is one of the most glorious classic flavor combinations ever. The perfect blend of sweet and salty, refreshing and savory…not to mention so easy to throw together. Peppery arugula serves as the base, but you can totally use whatever greens you’ve got in the fridge. Grilling fruit is such a great way to elevate any dish. A mix of sweet melon balls, creamy mozzarella, grilled peaches, thin, salty prosciutto, a bite from slivers of raw red onion, sea salt & a crack of black pepper make the most delicious summer salad. Springtime is officially here and I couldn’t be more excited! Tons of fruits and veggies are in season, bringing tons of new possibilities in the kitchen. Whether you are looking for lighter meals or dishes for Easter entertaining, I have an amazing recipe for you. I was really hopeful about this one when I dumped it in the oven - the flavor profiles are perfect together. But when these asparagus bundles came out of the oven; toasty, perfectly salty and tender, wrapped in delicate puff pastry, I was honestly a little overwhelmed. This is one of my favorite things I’ve ever made or blogged. They are unbelievably easy to make, take minimal time to bake up, and are delicious. 
I love asparagus. They are delicious on their own, or roasted with some olive oil, salt, pepper, parmesan, and lemon. But what about wrapping a few tender stalks in salty prosciutto, add a few shavings of nutty Parmesan cheese, and tuck it into a flaky blanket of puff pastry? It’s basically heaven. They are portable, don’t fall apart when eaten, and are gorgeous for entertaining. They’d be perfect for a spring or Easter potluck, and are pretty easy on the wallet if you find well-priced prosciutto, pancetta, or even ham.
